Kiwi Fruit Liquid Extract delivers ascorbic acid with actinidin and fruit pectin from Actinidia deliciosa. Actinidin is a cysteine protease and is heat-labile, so processing temperature determines whether any enzyme activity survives into the finished liquid. Specify potassium sorbate where ascorbic acid is retained; benzoate systems at low pH are not preferred alongside ascorbate.
